Overview
Updates the backend package manifest so deployments use VirtoCommerce platform 3.1051.0 instead of the previous PR-tagged build (3.1048.0-pr-3083-…).

PlatformVersion and PlatformImageTag in backend/packages.json both point at ghcr.io/virtocommerce/platform:3.1051.0, which the backend deploy workflow reads for vc-build InstallModules and the platform Docker image build.
